THE FOOD HERITAGE STAGE offers visitors an opportunity to watch some of Louisiana’s best chefs in action.  It is an exciting way to learn more about Louisiana’s rich cultural heritage.  The demonstrators will celebrate the amazing seafood and other local ingredients that make our region so special, while showcasing modern takes on classic dishes and cocktails.  Returning to the party is crowd favorite – the Drag Queen Brunch!

This year, as part of Jazz Fest’s Cultural Exchange Program, we welcome Chef Francisco Escalona Forth from Colombia for a full day of demos on Friday, May 3. On Saturday, May 4, the Festival is hosting a collaboration with the HOMEGROWN by Farm Aid program with a focus on farmers, equity and sustainability. 

We wish to extend our heartfelt thanks to our former Food Heritage Stage Manager Katie Pedroza.

Chef Francisco Escalona Forth is a native of the Caribbean island of San Andrés, located off the coast of Nicaragua, and distinct from mainland Colombia for its unique Raizal culture and language, an English-based Creole with a Caribbean lilt.
