Since the food was so cheap, I was thinking of some great combo's between vendors, here are just a few I came up with;
add the fried eggplant to your po boy (though the eggplant was sliced insanely thin this year)
put a rum praline in your ice cream
thin slice an apple and put it your fry bread, add honey and sugar
put the fried green tomatoes on your muffalatta (is that legal!?)
fried crab cake with Jalapeņo Tartar (god that stuff is good) in the crawfish tail po boy (cause it was dry)

I wish I could have bought a big juicy tomato (watermelon man said he wasn't allowed to sell them!) to add to my oyster salad.
I had thought of some more...but it's been a week now....

A very interesting idea, indeed. I did see Ibjamn but cracklins on her cochon de lait po-boy.

The girls at the cracklin booth were telling me about some guys who came every day to get cracklins and bread pudding from the booth next to them. They used the cracklins to scoop the pudding instead of spoons....
