I was feeling lazy today and just threw together the yummiest dish I've had in a while.

I mini-processed the Trinity plus some banana peppers from the garden. Sauteed in olive oil. Added garlic. Frozen crawfish tails. Mini-processed some tomatoes added that. Plenty Tony's. Added some chopped tomatoes and purple eggplant. Found a envelope of Knorrs Creamy Pesto in the pantry. Sprinkled that on and added a lil low-fat milk. Poured over whole-wheat pasta and YUMMY!!! Healthy too!! Took less than 30 minutes:D

Making groceries is the LAST thing I want to do in 95 degree weather. so I slapped together some of the shrimp spinach pasta stuff we practically live on around here. Marinate shrimp or crawfish in lemon juice and garlic/basil olive oil for a few minutes while the pasta cooks. Throw fresh (or frozen) spinach in the skillet with the lemon juice marinade and some seasonings. Cook it down for a few minutes and then add the shrimp until it's cooked. Dump the whole thing over the pasta and add feta cheese and some more seasoning. Add garlic french bread and call it supper.

I got a fat pork loin steak roasting. Some water, salt and some cayenne. I'll cook that until it fall apart.
Brown and white rices that I had in the freezer. Butter added.
Mix of baby limas and field peas on the side. With purple onion, of course.
Dessert will be buttered toasted corn bread with??? Maple syrup? Blackstrap? Blueberry preserves? Raspberry preserves? I can't make up my mind. Is that why they call me a breambob?

Pammed the pan, a couple drops of lemon juice, dill weed, cilantro, seafood pepper seasoning, red raspberry preserves, evoo drizzle, and a little more lemon juice over the top. Excellent!

hot here so i went with the typical- chicken fajitas marinated in soy, lime, garlic, oregano. grilled fast at 500 and put on tortilla with lettuce, cilantro, fresh salsa and guac. i am having plain white rice and grilled asparagus with lime redux on the side.

I'm impressed with the make do cookery. Tonight it was a cheesesteak with mushrooms and peppers from my favorite spot, Gabrielle's, since 1959! Good as just about any po'boy, but I do wish they did seafood, somehow??:cool:

Oh, y'all are making me jealous. I had very little time for dinner, and made a little buffet-for-one out of various left overs in the fridge. Pineapple & pork skewers (well, one skewer), borracho beans and broccoli.

I'm gonna try some of the other ideas here - thanks for the inspiration :)

Heidi had a friend visiting from NY and we were all down at the beach, hoping for a sunny weekend, got lots of r*** instead, so we cooked and cooked. Grilled grouper with rosemary garlic taters and asparagus on Thursday night, spicy stir-fried frimpf and scallops on Friday, sushi rolls with fresh tuna and killer scallop rolls on Saturday, crab stuffed flounder last night, making crab cakes tonite.

Had 6 chicken thighs in fridge and decided on fried chicken. Marinaded in water with hot sauce/salt/pepper/brown sugar mixture overnight. Dredged chicken in flour/essence and fried. Salad on the side. Chicken had great flavor. First time I tried this receipe.

I love Salmon and cook it at least every other week. Have never tried preserves. YUM! Have you tried Paul Prudhomme's Salmon Seasoning??

Nope. That's a seasoning I don't have. Might have to look for it. I've used fresh berries before, but I find it's hard to get them to break down enough to flavor the fish. You want to use a preserve that's more berries than sugar and filler. I like the red raspberry, marion berry, blackberries, and cherry.

Ooh, that sounds good.

I put a generous spoonful of spinach dip in the middle of a filet - tilapia, snapper, salmon would work - roll it & stick with a toothpick. Salt, papper, parsley & paprika on the outside, little dab of butter. Bake for 15 mins. Yummy, easy & looks like you worked really hard!! ;)

Try a pork tenderloin or two, sliced down the middle, stuffed with sugar free orange marmalade, spicy mustard and horseradish, lace together, bake as you like. Make a gravy of marmalade, pepper, cornstarch and chicken stock.

You will have died and gone to heaven.

However tonight I am eating home made (warm) bread dipped in honey for lunch and dinner. Everyone else ate real well, I was just the driver without drive through.;)

I went to the grocery after my dentist visit (lovely and exciting day, eh?) then I came home, put it all away and made a lasagne... used 96% fat free ground turkey with lots of good garlic and italian seasonings, added some sliced crimini mushrooms and sauteed zuchinni inbetween the layers... yes, I used fat free ricotta, but still used 3 eggs, and plenty of pecorino cheese, and fat free mozzarella (don't tell papa or my son, they didn't seem to notice), fresh parsley and some of the light ragu sauce from a jar somewhat doctored up... damn thing was very yummy... made a whopping big salad with some tomato and light cesare dressing, fixed them both up some italian rolls with garlic butter, that I loved smelling but stayed away from... plus now I have dinner for another night or two, depending on who eats how much and who takes some for lunches... anymore I never know...it was actually a quick and easy meal, between loads of laundry.

Im making slow cooked baby back ribs on the grill today with biscuits, fresh corn on the cob and a concotion of marinated cukes, red and green peppers and red onion. The boys here at the firehouse like to eat. I like to cook. We also had a big old breakfast of pancakes, sausage, eggs and hash browns this morning.

We have about 40 family member here on the lake....been cooking all damn day. today is my turn for dinner and am cooking the native food for me. We are having Chicken enchiladas (they call them Auntchilyndas) with black beans and sweet corn and Spanish rice...flan with caramel for dessert. Everyone is out on the boat, on the dock or in the hot tub while me and mom in law are hanging.. Don't have to cook again until Wednesday! Life is so good and I am happy hanging with family and of course you here too.

Hope no one is hungry tonight.

seeded and chopped watermelon
Vidalia onion
chopped chile peppers
Balsamic vinegar
salt
Mix it up and stick it in the fridge for a couple of hours


Juice of 2-3 limes
seeded and chopped watermelon
peeled, seeded and chopped cucumber
2 minced fresh jalapenos
Vidalia onion
fresh chopped basil
salt
black pepper
sugar
Mix the lime juice with the salt, black pepper, jalepenos and a little sugar. Add the other stuff and mix well to coat. In the fridge for a couple of hours.

I have less than no clue what the actual amounts should be (whatever I have on hand is how I measure stuff) but the proportions are pretty close to regular salsa. If you like more onion and less salt or whatever, go for it. If you don't have (perish the thought!) or can't get (a marginally more acceptable excuse) Vidalias, use a sweet red onion. I've also been know to substitute Pace's for the chopped jalepeno and actually prefer that. I've also discovered that no matter how much salt I put in it to begin with, I always have to add more when I start eating it. Most of the time, I forget to add the sugar too.

Serve with tortilla chips. We prefer the white tortillas with this since it's a lighter salsa than the traditional.

Yum...that sounds great. You measure like I do - most of my recipes are "add until it looks right". And Vidalias very easy to get around here. I'll give this a go this weekend.

Does everybody on this board cook New Orleans food all the time??? LOL!!! I had leftover chicken tetrazini that I made yesterday & Hebjamn had leftover Mexican casserole (Funkjunkies recipe) that I made on Saturday.

It's not always cajun food, but more times than not, I put a pot of rice to cook and THEN decide what to fix for supper. You can never go wrong if you have a pot of rice handy. Since the kids are gone most of the time now I tend to cook what I know, which is cajun from one grandmother and good old country soul food from the other. Both grandmothers were good cooks and very intuitive, so we learned how to cook, not just follow recipes.

Delta's recipes sound on target, except, don't forget the fresh cilantro! I don't add sugar, but I don't see how a pinch would hurt. I make it with and without cukes. Sometimes I use an anaheim pepper instead of jalapeno.

I also like frozen margaritas made with with chunks of frozen watermelon instead of ice. A yummy treat! No recipe, I just play around with the ingredients until it tastes good.

with the heat being so bad, i've been using my large outside grill to cook. i roasted corn on the cob in the husks and marinated pork chops. after the corn was finished, i sauteed onion, red peppers, threw in some spices and then added the corn off the cob. delish!

with the heat being so bad, i've been using my large outside grill to cook. i roasted corn on the cob in the husks and marinated pork chops. after the corn was finished, i sauteed onion, red peppers, threw in some spices and then added the corn off the cob. delish!

You can also shuck the corn and throw in the onions, peppers and whatever else (squash, mushrooms, etc) with a little butter in foil and grill it all at the same time without having to use the stove at all. It cooks in the time it takes to grill the meat and all you have to do is slice the corn off the cob and serve.

Best Meat Marinade

Have been working on this one for a while. Great for steak, but works with any meat and even poultry or shrimp. Used with some bone-in strip steaks this weekend...yum!

1 cup cannola oil
1/2 cup soy sauce
1/3 cup freshly squeezed lemon juice
1/3 cup balsamic vinegar
2 tablespoons creole mustard

Whisk the first 5 ingredients together, then stir in the following:

3 tablespoons Pickapeppa sauce
2 cloves garlic, minced
1 medium onion, sliced
1 teaspoon cajun spice mix
2 teaspoons black pepper

marinate meat in fridge a minimum of overnight, best when left 24 hrs.

Cooking Grandma Maroni's marinara sauce and meatballs (food network recipe), broccoli salad, blonde brownies, corn and black bean salsa, and shrimp cheesecake, using the crawfish cheesecake recipe. Also thinking about margarita watermelon salad, watermelon margaritas and blueberry mojitos.

Does everybody on this board cook New Orleans food all the time??? LOL!!! I had leftover chicken tetrazini that I made yesterday & Hebjamn had leftover Mexican casserole (Funkjunkies recipe) that I made on Saturday.
Hee hee hee. Course not, but it does feel like that's what I want to post about.

Last week I went to a little cooking school team building thing. It was great fun and my lil group did a flatbread pizza on the grill.. Yum! Carmelized onions, prosciutto, sliced fresh figs, and fontina cheese. Much easier than I expected.

Tip from a Georgia Peach - buy your peaches hard, and keep them closed up in a brown paper bag in a pantry or cabinet. Check each day or two and remove the ones that have ripened. You almost never get any rotten fruit that way - it matures slowly.

Speaking of summer fruit, I just made a baby spinach and baby spring mix salad with fresh mango, blueberries, walnuts, feta cheese and dried cranberries. Raspberry walnut vinaigrette dressing.

Also grilled boneless pork chops with a Dale's and fresh mango marinade.

Rice with mo butter and some white beans. Dessert is a toasted Popeye's biscuit with butter and blueberry jam. Must remember my Bufferin tonight, and to brush my teeth ;)

Delta's recipes sound on target, except, don't forget the fresh cilantro! I don't add sugar, but I don't see how a pinch would hurt. I make it with and without cukes. Sometimes I use an anaheim pepper instead of jalapeno.

I also like frozen margaritas made with with chunks of frozen watermelon instead of ice. A yummy treat! No recipe, I just play around with the ingredients until it tastes good.

Interesting.. I had just clipped this internet article/recipe the other day and am looking forward to preparing some concoction soon!

Cynthia's Sassy Watermelon Salsa

1/2 medium cucumber, diced
1 Tbsp red onion, finely chopped
2 tsp fresh cilantro, minced
1 jalapeno, diced

Seafood Barbeque Sauce
Japanese Fish Barbecue Sauce

1 cup teriyaki sauce
1/2 cup honey
1/2 cup soy sauce
1 teaspoon fresh ginger, minced ( I like ginger, so I use a lot more than this)
4-6 garlic cloves, minced
2 tablespoons cornstarch, dissolved in 3 tablespoons cold water

Combine all ingredients in saucepan and bring to a boil over medium heat, stirring constantly. Remove from heat and allow to cool to room temperature.

Heat grill, brush both sides of fish fillets with sauce and grill one side over medium heat about two minutes. Turn and brush with sauce . Continue to cook until desired done-ness , brushing with additional sauce. Makes enough for 8-10 fillets.

This sauce works well with almost any fish, but especially with meaty tuna, swordfish, and salmon. I used it last week on a large fillet of wild-caught salmon. It's been a favorite I've used for over ten years. It's great on those big, yummy gigantic shrimp, too. Note this sauce is low fat because it contains no oil.

Wine suggestion: Sauvignon Blanc

You can also shuck the corn and throw in the onions, peppers and whatever else (squash, mushrooms, etc) with a little butter in foil and grill it all at the same time without having to use the stove at all. It cooks in the time it takes to grill the meat and all you have to do is slice the corn off the cob and serve.

oh, i never even turned on the oven. i did this all on the grill and then used the cast iron pan to do the onions and red peppers!

LOL! I never even thought about using the cast iron skillet on the grill. All my cast iron stuff outside has been salted/burned/treated with acid to make it rust, so it never occurred to me to use the good stuff to actually COOK with out there!

Best Meat Marinade

Have been working on this one for a while. Great for steak, but works with any meat and even poultry or shrimp. Used with some bone-in strip steaks this weekend...yum!

Sounds very similar to what I use for my steaks except I use olive oil, and for the spices I use McCormicks Montreal Steak Seasoning ... a blend I cannot go without anymore

That is funny, Stax. But I don't see where there is a problem ;)

How I seasoned my last Lodge skillet:

Buy a 12 piece bag of regular fried chicken

Remove all the meat from all the pieces and make a big-ass mess of chicken salad, or chicken something, whatever. Resereve the skin, fat and bones.

Put 4 of the reserved pieces in the skillet and into a 450F oven. Cook until all the crud has rendered or it's smoking too much. Let it cool, throw out the crud, save all the rendered fat and take a paper towel and wipe down the entire skillet with the fat.
Do that two more times, then once back in the oven at 500F or until it is smokey or burns your house down. I dare anything to try and stick to my skillet.

This weekend I made scalloped pork chops; inch thick pork loin chops on top of scalloped potatoes and all baked together and I made a big pot of sausage red gravy & meatballs. I also made a big pot of veggie chili, some blueberry muffins and a chocolate cake (for David's sweet tooth).

I broke down and bought ice cream yesterday, Blue Bell Vanilla Bean. First I've bought this summer. I could not resist any longer.

I thought my AC was going bad, wasn't cycling and it seemed hot inside.
So yesterday afternoon I went out and tested the volts and amps, looked OK. It was just a hot mammy jammy then and again today, with the humidity the temp was about 107F. Ice cream for dessert tonight too, as my AC just runs on and on $$$.

Tomorrow is PapaRoux's 62nd birthday (I could trade him in for two 31 yr olds now!!) and he wants to go to Andrea's Trattoria... they make such wonderful food and desserts! I hope they don't have both the chocolate and the vanilla creme brulee tomorrow night... or I'll want both!! UGH... I'm gonna get my arse up early and exercise before going to work, and get myself some extra points tomorrow! LOL

Too hot to cook. i made chicken enchalada's...easy easy and can use micro. mix with hands...cut up green peppers and green chili's, onions, monteray jack cheese and cheddar; cut up chicken (can use canned)...course add your favorite spices or sauce. get corn torilla's, spread with sour cream, throw chix and such in tortilla and roll...cover with monteray and cheddar cheese....nuke for 1 1/2 minutes. heaven without the heat.

My favorite stupidity-induced stunt this week is the guy who slammed on his brakes and jumped out of his car in the middle of the intersection to shake his fist at the guy who cut him off. One car almost rear ended him, another damn near took his door off, and he hosed up traffic at a 3-street intersection. Like the moron who cut him off even knew, or cared, how bad ass this guy looked.

We were laughing our heads off though, since the bad ass was in a pale lavender car. It's hard to be taken seriously when you drive something that makes you look like you breed kittens for a living.

AHH...you went to the comedy club! thats actually a pretty good one. did you ever go upstairs to the 3rd floor? that was Champagne Charlies. i loved working at the bottom and hanging out. still the best mexican food and margs i've ever put a tooth to. tommy williams owns the whole joint. he was a hoot! he'd pile us up in his station wagon and take us to other comedy clubs to check out the competition....theres a blur of a time in Richmond Va....more recipes...for your cornbread, add jalepeno's and corn....then after you cut, put montery jack cheese on top and nuke for a min. yummy!

2 oz. (1/4 cup) bourbon whiskey
4 oz. (1/2 cup) melted margarine
5 eggs
1/2 cup self-rising flour
1 tsp. salt
1/3 tsp. black pepper
1 cup sugar
3 cans (16 oz. each) cream-style corn

Preheat oven to 375 degrees. Mix together the whiskey, melted margarine and eggs. Add next the flour, salt, pepper and sugar. Mix with a wire whisk until incorporated. Blend the corn into the custard mixture and pour into a greased 2-quart casserole dish. Bake for 1 hour and 10 minutes. The center will still be soft. Let sit for 15 minutes to settle before serving.

The most delish and unhealthiest meal I've had in a long time

I was sooo good today, even had 18 points left for dinner, so we after closing up the library, we went to our favorite bar/restaurant on the lake, and I had a burger (no cheese) with mushrooms, onions, lettuce and tomato, and some really good fries.... so I'm sure that blew the points and made me dip into my weekly extra's... but I also had two mojitos made with splenda ... so only 4 points in booze! Papa had a roasted veggie sammich on really great, crusty, italian roll with sesame seeds.... grilled eggplant, grilled peppers, grilled portobello and grilled brocolli rabe, with provolone cheese, and fries too....but he drank beer, while we chatted at the bar and watched the Phillies game... and the lightening over the lake, which was very cool.
