where is the food thread?
any way, I must say, did everyone try the
Trout Baquet?
I swear, I eat 5 or 7 times each day,
You can't believe how fast I can move between sets for food and back or on tho the next tent!
but the Trout Baquet
had to be the best thing the whole weekend.

I had the trout a few times during the week-end. It was across from my booth, so I didn't have to go far in the r*in!;)
It was very good! :D

I had the turkey wing rather than the ribs -- it's all good.
Had my first trout today.
It won't be my last.

so,.. you skipped the fried eggplant with crawfish sauce then???...
the trout baquet combo with the gumbo made for a most delicious afta' dish...
afta' the eggplant and crawfish sauce that is........
i catch me some of that there sea trout quite often down here... gotta get me that recipe......
speakin' of great eatin'... had dinner last night at cafe minh,.. http://www.zagat.com/Verticals/PropertyDetails.aspx?VID=8&R=117710 truthfully,. close to,.. if not the best dinner i eva' had (soup to nuts,.. actually app to dessert) in new orleans.... higher brow vietnamese with a new orleans influence........

4139 canal,.. one block north of carrollton... from the quarter/business district,.. a very easy ride up canal on the trolley car to the canal/carrollton intersection,.. simply cross that intersection headin' northeast and then walk but one very short block further up canal,.. right hand side..
check out the link i posted... even maps it out for ya'... great food awaits you!!!!......
when i was headin' ova' there for my very 1st time this past fri nite,.. unaware of the exact location myself,.. i got off the trolley and asked a few groups of people at the intersection if they could point me in the right direction... no help was forthcomin'... at that point,.. standin' there in the dark damp night,.. i simply stopped and followed my nose... the most amazin' aroma's were floatin' on the wind from a block away.... i made it ova' to the cafe in an absolute trance....

Next year, all I'm gonna eat is Trout Baquet and the Softshell Crawfish poboy.

The recipe must be something like this
Saute Crab Meat in butter with a dash of lemon, and a dash of garlic, dump on top of broiled trout ... enjoy

Great story, Paul. Like a bloodhound on the scent for great food - I love it!
We used that metaphor one year when we went to Fest and also went up to Lafayette for a day for the Festivale Internationale de Louisiane - music hounds on the scent of a music trail! It also makes me think of the French Quarter - how it gets to all the senses - the special smells all wafting together (some not quite so pleasant, like Bourbon street!), but all making the total experience that is uniquely New Orleans. Thanks for posting the info, and that great image - it really brought me there!

If you ever get a chance to go Mandina's, they have some great trout dishes there. They're located on Canal Street - up from the Quarters a ways, not sure of the exact address, but the Canal streetcar line goes right by it, I think. And great gumbo, as well.

I think this is sea trout, much different than freshwater- flaky and white, very light flavored, less fishy.

Sounds very yummy. Thanks for the description - makes my mouth water! I've had Trout Menuiere at Mandina's, but it wasn't topped with crabmeat sauteed in garlic butter. Maybe they have Trout Baquet on their menu now. Love trout, where I live we have great Lk Superior trout (which can get up to 60 - 70 lbs or even more - simply amazing!)

wasn't you....we definitely thought there was something way off (no lines was a good indicator) - the sauce was completely separating (really didn't want to see how much butter/oil I was eating)

I didn't notice that it tasted different this year, but I too was amazed not to see long lines for it any of the 3 days I was there.

I had the trout this year, right after the Beignets and iced coffee, and it was great, but my favorite dish this year was the Bun, Vermicelli w/ grilled Shrimp from Ba Mien Vietnamese.
The worst dish was the shrimp cocktail at the Grandstand. Even with the dollar coupon.
Also the combo Crawfish Stuffed Puff with Cajun Crawfish Rice from
Ledet & Louque was B O R I N G L Y bland.

We started with the trout for breakfast on Thursday. It was good but waaaaay salty. We ended fest on Sunday with one last round of PQA Gumbo. In between we ate all sorts of things including one dish of crawfish monica (me). It was ok -- I actually thought it was better than it had been the last couple years.
For those with quail and pheasant available at their local grocery stores...

OK now I might try it. I don't much care for Lake trout.
It was indeed sea trout and pretty tasty, though I would have used unsalted butter...

I liked the trout, too, but it wasn't my favorite. I actually like the Catfish Almondine, potato salad and stuffed crab combo better. The fish was so crispy and light! :)

I tried the ya ka mein! I wish they would sell a spicy and non-spicy version (like sweetened and unsweetened tea) -- I really liked it but couldn't eat much as my mouth was on fire!!
