I want bacon. Now! But I don't have any here, and haven't bought any in months. To the the grocery tomorrow, I see a big, fat bacon cheeseburger coming up... With tater tots and Ranch Style beans. Yum. Tonight it's leftovers, which are not bad. But no BACON !!!

Bacon Explosion
Adapted from Jason Day and Aaron Chronister
Time: About 3 hours
2 pounds thick-cut sliced bacon
1 1/2 pounds Italian sausage, casings removed
3 tablespoons barbecue rub
3/4 cup barbecue sauce.
1. Using 10 slices of bacon, weave a square lattice like that on top of a pie: first, place 5 bacon slices side by side on a large sheet of aluminum foil, parallel to one another, sides touching. Place another strip of bacon on one end, perpendicular to the other strips. Fold first, third and fifth bacon strips back over this new strip, then place another strip next to it, parallel to it. Unfold first, third and fifth strips; fold back second and fourth strips. Repeat with remaining bacon until all 10 strips are tightly woven.
2. Preheat oven to 225 degrees or light a fire in an outdoor smoker. Place remaining bacon in a frying pan and cook until crisp. As it cooks, sprinkle bacon weave with 1 tablespoon barbecue rub. Evenly spread sausage on top of bacon lattice, pressing to outer edges.
3. Crumble fried bacon into bite-size pieces. Sprinkle on top of sausage. Drizzle with 1/2 cup barbecue sauce and sprinkle with another tablespoon barbecue rub.
4. Very carefully separate front edge of sausage layer from bacon weave and begin rolling sausage away from you. Bacon weave should stay where it was, flat. Press sausage roll to remove any air pockets and pinch together seams and ends.
5. Roll sausage toward you, this time with bacon weave, until it is completely wrapped. Turn it so seam faces down. Roll should be about 2 to 3 inches thick. Sprinkle with remaining barbecue rub.
6. Place roll on a baking sheet in oven or in smoker. Cook until internal temperature reaches 165 degrees on a meat thermometer, about 1 hour for each inch of thickness. When done, glaze roll with more sauce. To serve, slice into 1/4-to- 1/2-inch rounds.
Yield: 10 or more servings.

I am confused by the numbers though. "containing at least 5,000 calories and 500 grams of fat" There has to be at least 25 servings in that roll because it is soooo heavily pork laden. That is only 200 cals and 20g fat if my math is right. They mean a serving right...please tell me they do because I will abandon the healthy choice meal in the freezer tomorrow for a slice of this pork goodness.

Wow, my brain totally skipped over that info!!
The recipe says "10 or more servings".
With an obvious yummy but calorie laden recipe, I chose to ignore the Calorie/Fat content. If I'm eating it, I'm not worrying about it. :)

I don't there's any situation in which that wouldn't be true. For me.
Smoking it probably does infuse a nice flavor, but I think a recipe like this requires the use of a deep fryer.

Deep frying would render the bacon too crisp (read burned), by the time the inside was done. Smoker would work perfectly.

Okay, since I'm not feeling the Praline Bacon Explosion, how about serving the "plain" one on these:
Maple Bacon Biscuits
Total time: 1 hour, 15 minutes
Servings: Makes 2 dozen biscuits
1 pound bacon, cut into 1/2 -inch pieces
3 1/2 cups flour
2 tablespoons sugar
1 tablespoon baking powder
1/2 teaspoon baking soda
3/4 teaspoon salt
1/2 pound (2 sticks) butter, cut into 1/2 -inch cubes
3/4 cup plus 2 tablespoons maple syrup, divided
3/4 cup plus 2 tablespoons buttermilk
1 egg yolk
1 egg
1 tablespoon heavy cream
Fleur de sel
1. In a medium frying pan, cook the bacon over medium heat until cooked but not crispy, 10 to 12 minutes, stirring frequently. Remove the bacon to a paper towel-lined plate or pan, to remove excess fat.
2. In a large bowl, whisk together the flour, sugar, baking powder, baking soda and salt.
3. Using a pastry cutter or fork, cut in the diced butter, until it resembles small peas. Stir in the bacon, then one-fourth cup plus 2 tablespoons of maple syrup and the buttermilk until the dough just comes together (it will still be clumpy). Be careful not to overwork the dough.
4. On a lightly floured surface, gently press or roll the dough to 1-inch thickness. Cut the biscuits using a 2-inch round cutter; you should have 24 biscuits. Place 12 biscuits on each of two parchment-lined baking sheets, spaced 2 inches apart. Freeze the trays just until the biscuits are chilled, about 10 minutes.
5. Heat the oven to 350 degrees. While the biscuits are chilling, prepare the egg wash: In a small bowl, whisk together the egg yolk, egg and cream. Brush the chilled biscuits with egg wash and top each with a pinch of fleur de sel.
6. Bake the biscuits until they just begin to brown, about 25 minutes (you should easily be able to pick the biscuits up off the tray). Remove the tray from the oven. Quickly drizzle 1 teaspoon of the remaining maple syrup over each biscuit, then place the tray back in the oven for 3 minutes more. Serve while still warm.

Not if you coated the whole thing in a beer batter...

Well . . . some folks became veggie or kosher later in their life and they might still appreciate the taste of bacon too! I don't eat red meat (except for rare occasions) and I still LOVE the taste of bacon, so I'm gettin' me some Baconnaise!! :D

I worked for the company that did the animation on both movies - I ran the Food Services. When we got the 2nd movie, I got tons of requests for pork products in the kitchen. :p

Think of the possibilities ....
It is such a simple idea, so plainly obvious that many Southerners can’t believe they didn’t think of it first: take the South’s trademark refreshment — sweet iced tea — and make it alcoholic.

The bakon chocolate martini makes my stomach churl...but the marinated steak sounds yummy!
