hello ladies....welcome to the board.....im sure someone on this board
will come along soon and answer your question....
i think on the main jazzfest page there is a tab on vendors...
you might want to start there...
I have some food vendor info on this page (at the bottom), though no specifics on financials.

In any case, it's no secret that Jazzfest food vendors net a lot of profit. I believe that there are some small businesses who make their entire years profit over those two weekends. Getting a slot is extremely competitive.
You can see historical attendance numbers here:

Watermelon is a great idea, though. I had never seen it sold at a fest until last summer.

I do know that the food jurying is VERY competitive. This is the only show that I do that the food is juried in.

There are a couple of "crowd pleaser" facilites, air conditioned truck units with several stalls in each, plus sinks with running (but non-potable) water. These are parked alongthe race track near the Gospel Tent, and (IIRC) behind the Fais Do DO stage.
Even better than that, inside the Grandstand building, you can use the permanent public restrooms used by race fans when the horses are running. Expect longer lines for these, especially later in the day and especially for the ladies room.

Really though, the portalets are better than most French Quarter bathrooms on a friday night.

bathrooms in 3rd world countries are not as scary as some i've seen in the quarter. my fav was this little courtyard restaurant, i ran into one of the strippers from next door, seems they shared a loo. the place was beyond description. i do have a picture buried in a shoebox somewhere.
the portapotties are not the problem, its the people who use them in inconsiderate ways.
