Just wanted to take a minute and wish everyone a happy Fourth of July. While i know we may criticize and comment a lot on this board about the government (all levels) and the many issues that our country faces - let's all remember this week that any country that has Crawfish Fest. Jazz Fest, Brews & Blues (Telluride) to name only a few and whose citzens have the opportunity to enjoy the kind of freedom we have to freely exchange thoughts and ideas like we do on this board is a great place to live and is something to be proud of.....
(and that comes from one of us down here in NOLa who every now and again feels like we've been forgotten by all levels of gov't).

I'd be in Arizona or Tarrasco, Mexico with either of my grandparents' tribe...BUT...i am happy to celebrate the bounty of this country,.... i'm lucky....am one generation removed from the reservation...born and raised and San Diego i consider this one of the greatest blessings of my life.
Am proud to be an American....yes we bitch.....but how else can things get better if we don't shout it out!

Think today upon the personage of one Button Gwinnett, of whom you likely have never heard but whose name is among those at the bottom of the document that says:
"We hold these truths to be self-evident, that all men are created equal, that they are endowed by their Creator with certain unalienable rights, that among these are life, liberty and the pursuit of happiness."
Gwinnett was one of the 56 signatories of the Declaration of Independence - first signature on the left, in fact; can't miss it - said Declaration and said independence we celebrate this day.
Born in England, Gwinnett arrived on these shores in the 1760s. Tried his hand at the mercantile game and failed. Had more success as a planter and got elected to Georgia's Provincial Assembly. Was offered and declined command of Georgia's continental militia. Was elected to the Continental Congress. Afterward, was candidate for brigadier general in the Continental Army, but post went to rival and nemesis Lachlan McIntosh, who killed Gwinnett in a duel in 1777, less than a year after the latter's brush with greatness.
Gwinnett didn't sign much of anything other than the Declaration, so any scrap bearing his signature is priceless. Or going for upward of $100,000. As one collector put it, it's a holy grail of autographs.
We remember all this, and Gwinnett, today because of what he represents. A comparatively ordinary man among the larger-than-life who gathered in Philadelphia 231 years ago and changed history. Jefferson, Adams, Hancock, Gwinnett and all the others put their names to a work of genius that was animated by a profound respect for the individual, for all men, for the average as well as the privileged, but for the ordinary most of all.
Because, given freedom, ordinary men and women do extraordinary things. In this nation, that is not just a possibility; it is expected. It is common. It has been proven time and time again. It is part of what America - Americans - are all about. Happy Fourth!

I am sitting here thinking about last 4th of July. The family was in New Orleans all together having a ball.
This year I am home with all the kids spending the day with friends. My oldest is at Lake Anna camping and skiing with his girlfriends family, the middle one with his girlfriends family at Lake Holiday skiing and my youngest with the neighbors at a pool party and the old fart and me watching Bonanza reruns! Going to Outback for dinner and if the weather holds watching fireworks at the local park with the remnants of Jefferson Starship.
Now you can guess I am longing for New Orleans. That was a great fourth down by the river, family all together in the greatest City in world. Different year, different mindset. Bonanza? Gees, I am feeling like a geezer

Man, Chicklet and I just got back from the best fireworks show EVER. They were playing the coolist patriotic music to it, too. And let me just say, I will never buy frozen corn on the cob again. I got some fresh corn on sale and it was soooooo freaking good. It's been a stellar day. :D

Hey there Chip! Buy some fresh corn on the cob, peel the leaves back and liberally dob butter over the corn. Leaves back up, wrap in foil and chuck on the barbie. Yumbo!

Yeah what Ozzie said....AND you can slather up the lil ole corn cob w/ pnut butter (could sprinkle some chili flakes if you like) roll those leaves back up and toss her on the barbie.....

It's actually a cookbook about tamales, and the history of corn in Mexico and in the American Southwest.....i know call me crazy and Korny...hahahaha

Everybody has their own way of doing it. I used to do corn in the husks on the grill, but it seems like that is just steaming it. Now I melt a mix of butter, garlic powder, salt, pepper & cilantro & fresh lime & brush it over the corn & grill till it carmelizes, basting it the whole time. Very yummy.
I saw Paula Deen do something that I've been wanting to try, but never have. She spreads mayo on the corn, then wraps it in bacon. I imagine, like the pb, it sounds wierd but tastes fantastic!

hey Jenn....yup mayo is a fave in Latino community...but they put it on after the corn is cooked as you would w/butter....rolling the corn is different stuff too...like cotija cheese (a tangy crumbly mexican cheese). I love my corn really, really carmelized on the grill, brings out all it's sugar! And yeah it's good to be able to do more stuff like sit at the computer and drive...i was going crazy depending on everybody for rides!

The lil skinny, hot as fire tamales that you get in LA, and some parts of TX are really different than the ones i've learned to make....and you see mostly out West.
Tamales are food of celebration, baptisms, weddings, always at Christmas...lots of fun!
